One of the major lifestyle changes I have had to make to manage my PCOS is to eat a low carb diet. I love bread so this was not an easy change. However, I have learned to embrace the low carb lifestyle. I still treat myself once or twice a week because I have learned that balance is key.

Last week I asked on my Instagram what you guys wanted me to blog about and this came up several times. Next week I will be talking about creating a morning routine and how to stick to it (another popular suggestion). But for now let’s dive into some of my favorite low carb recpies.

Barbque Ranch Chicken Salad – This is actually a recpie I came up with myself. I am not super creative person but this salad as now become a favorite in our household. It is super simple and you can prep everything in advance so all you have to do is throw it together.

You will need:

Chicken breast

Romaine Lettuce

1 can of corn drained

1 can black beans rinsed and drained

Tortialla chip strips

Shredded cheese of your choice

Barbque sauce

Ranch

I prepped the chicken ahead of time by marianting in some barbque sauce. I than cooked in my air fryer but you could grill or cook it in the oven.

While the chicken cooked I rinsed and drained my black beans and corn and mixed them together in a container.

Once the chicken was done cooking and was cool I chopped it up. I than cut up my romaine and put everything in a bowl. I topped the salad with ranch and some additonal barbque sauce.

This was so good and so simple! I highly recommend it. Let me know if you try it!

Low-Carb Easy to Make Egg Roll In A Bowl ( Stylish Cravings) – This has always been a favorite of mine since before I started the low-carb diet. It super simple and easy to make and is great for leftovers. We like to use either ground pork or ground turkey!

Slow Cooker Low-Carb Cheesesteaks (fitSlowerCookerQueen) – OMG you guys this is my new favorite slower cooker recipe. It was so easy. I literally just put all the ingredients in the slow cooker and several hours later I had some perfect philly cheesesteaks. You could serve them in a lettuce wrap but I am not going to lie we ate ours on some hoagie rolls. The next day I ate the leftovers in one of my low-carb tortillas and it was just as good!

Garlic Butter Herb Pork Chops with Zucchini (eatwell101) – We made this on a snowy, Sunday night and it was amazing. We used bonless pork chops but I would suggest using bone in pork chops for more flavor.

And finally because it is important to treat yourself here is a pasta recipe I made up the other night for dinner.


Turkey Meatballs with Brussel Sprouts and Pasta

For the Turkey Meatballs I used this recipe from Dash of Evans. The recipe calls for making them in an air fryer and they turn out perfectly. If you don’t have an air fryer you can still make them in the oven.

Next I shredded some brussels sprouts in a food processor. While the meatballs cooked in the air fryer, I cooked my pasta. Once my pasta was done, I sauted the shredded brussel sprouts in some olive oil along with some salt, pepper, and of course garlic powder.

After 5 minutes I added the pasta to the brussel sprouts along with sauce. I wish I had pesto on hand because I think that would have tasted better but regular pasta sauce works fine as well.

I then put some pasta in a bowl and topped it with the turkey meatballs and it was so perfect.
