Fall is probably my favorite time of year for cooking. I love all the flavors and smells that are associated with this season. This year I am extra excited that I live in a place where the weather actually gets below 70 degrees. I have been able to use my crockpot and bake all sorts of yummy fall treats. Today I want to share with you some fall recipes that my family has been loving. These are not my own recipes but are from some of my favorite food blogs that I follow.
Two weeks ago I made this soup on a rainy and cold Sunday. Besides tasting amazing, our house smelled so good for days afterwards. It was so good that my husband declared it the start of soup season in our house. It a super simple recipe and the leftovers can be frozen. We will defintely be making this one again in the very near feature!
Back in September my husband and I decided to eat more low carb. I have always wanted to try and cook a spaghetti squash. I did years ago and it failed so I was a little nervous to try again. However, this turned out amazing. Roasting the squash was super easy and I had made some turkey meatballs the day before. Dinner was on the table within a hour and I really did not have to do much. I will say that there was a lot of “spaghetti” in each squash that both my husband and I agreed that we could have shared one half. I saved the leftover and it reheated very nicely the next day. So you could make this the day before.
Another recipe we have enjoyed was this brown sugar glazed salmon. We both loved this one and we will be making it again. It was super easy and we just paired it with some mashed cauilflower and a salad. The mashed cauliflower was ok but probably not something I would make very often!
Last week I decided I wanted to do some baking. I was going to visit a girlfriend and wanted to bake her a healthy but yummy fall treat. I found these delicious oat cookies. I made her a batch and naturally had to taste one to make sure they were good. They were so good I decided to make another batch for my husband and I. They did not last long in our house and are super easy to make. I will be making these again when my family comes to visit for Thanksgiving.
